Stir curry powder in heavy small skillet over medium-low heat until fragrant, about 2 minutes. Transfer curry powder to small bowl. Stir in mayonnaise and lemon juice. Season with salt and pepper.
As a kid, I grew up eating these pinwheel sandwiches from the local market’s deli. Somehow, the fact that the sandwich was rolled and cut into a circle made them much more exciting to my young palate.
